Momma’s Meatballs

When it comes to hearty, comforting meals that bring the family together, Momma's Meatballs stands out as a beloved favorite. This recipe combines seasoned ground beef and pork to create juicy, flavorful meatballs that are perfect for dinner. Served with homemade marinara sauce and over a bed of pasta, this dish not only satisfies hungry appetites but also provides delicious leftovers for lunch the next day. With a generous yield to feed a family of six, Momma's Meatballs will have everyone returning for seconds—and perhaps even thirds. Gather your ingredients and prepare to indulge in a meal that embodies warmth and tradition.

Ingredients:

  • 2.6 pounds Organic Ground Beef

  • 2 Farm Fresh Eggs (from our chickens-these ones are compliments of Pepper and Beaky. Thank you ladies!)

  • 2 tbsp Fresh Garlic

  • Pepper to taste

  • Himalayan Sea Salt to taste

  • Rosemary to taste

  • Thyme to taste

  • Breadcrumbs from a loaf of my fresh twice a week loaf I make (recipe linked here)

Instructions:

  1. Preheat oven to 425F.

  2. Combine ingredients in a large bowl and mix thoroughly.

  3. Portion the mixture into 80g portions using a kitchen scale. I like to cover my scale with plastic wrap so I don’t contaminate the buttons.

  4. Place the meatballs onto a baking sheet.

  5. Place in the oven on the middle shelf and set a timer for 28 minutes.

  6. At 28 minutes, place a temperature probe into one of the meatballs. Monitor until temperature reaches 165F. If placing in pasta sauce to simmer remove at 162F.

  7. Once the temperature is reached, remove from the oven and let rest for at least 5 minutes.

  8. Eat and enjoy!

I usually add these to my homemade pasta sauce tossed with spaghetti noodles. If you are busy and need a quicker option, rice from the zojurushi rice cooker is a great alternative. These never fail to be a hit for a hungry family!
